Summary

The Food and Beverage Director is responsible for overseeing all aspects of food service operations including alcoholic beverage sales. This position is governed by state and federal laws and agency/institution policy.

Functions

Oversees food quality and ensures that agency customer service standards are met. Assists in the preparation of food orders, oversees banquet setups, approves menus and supply orders, and manages inventory by checking on storage procedures, rotating supplies, and altering menus to cut down on food waste. Ensures the restaurant manager is maintaining proper food and labor costs, the staff has proper certifications, and that all employees are following Bar/Liquor Service guidelines. Inspects facility for cleanliness, safety, and maintenance needs, and coordinates requests for repairs. Meets with special groups or other departments, to coordinate special activities or arrange for special accommodations, handles customer complaints, and offers special assistance. Performs other duties as assigned.

Knowledge, Skills and Abilities

Knowledge of laws, regulations, or standards governing food preparation and storage. Knowledge of appropriate use of food and beverage service equipment, and facilities. Knowledge of food service techniques, procedures, and safety concerns. Ability to train employees in a multitude of job tasks related to food service or kitchen sanitation. Ability to provide information to supervisors, co-workers and subordinates in verbal or written formats. Ability to perform comparative food shopping and ordering, as well as knowledge of state procurement policies.

Minimum Qualifications

The formal educational equivalent of a bachelor's degree in business, accounting, hospitality, or related field, plus four years of experience in food and beverage management, including two years of experience in a supervisory capacity. Additional requirements determined by the agency for recruiting purposes require review and approval by the Office of Personnel Management. OTHER JOB RELATED EDUCATION AND/OR EXPERIENCE MAY BE SUBSTITUTED FOR ALL OR PART OF THESE BASIC REQUIREMENTS, EXCEPT FOR CERTIFICATION OR LICENSURE REQUIREMENTS, UPON APPROVAL OF THE QUALIFICATIONS REVIEW COMMITTEE.
